Esta investigación se realizó con el objetivo de brindar una alternativa de conservación para el camarón (Penaeus vannamei), un crustáceo conocido y muy apetecido. Para esto se usaron los laboratorios de la Facultad de Ciencias Agropecuarias de la ULEAM, la investigación se desarrolló bajo un diseño completamente al azar, con cuatro réplicas para cada tratamiento, los factores fueron: zumos ácidos homogenizados y pasteurizados con agentes antimicrobianos naturales (Factor A) y temperatura (Factor B); el primer factor contó con 2 zumos, limón sutil y maracuyá; el segundo factor contó con 2 niveles de temperatura: 28 °C y 5 °C. En cuanto a pruebas físico- químicas las variables analizadas fueron el pH, acidez. Para determinar el mejor tratamiento se realizó análisis sensorial sustentado estadísticamente los resultados. Obteniendo como mejor tratamiento (a1b2). Evaluando y analizando su estabilidad microbiológica. En el cual Los recuentos demostraron que el método de conservación aplicado aumenta la estabilidad microbiológica del producto. Los resultados indican que la conservación en zumos ácidos junto con agentes antimicrobianos naturales y la refrigeración aplicada como tratamiento para preservar el producto representa ser una buena alternativa.

There is growing evidence that tourism entrepreneurs not only contribute in the socio-economic development of a nation but also in the overall attractiveness of a destination. In fact, numerous studies on the topic have led researchers to conclude that local entrepreneurs are important stakeholders and their supportiveness and/or non-supportiveness has a considerable impact on overall tourism development of a nation. Mauritius, as a small beach destination, is not exempt from this phenomenon. The island, which is popular for its sea, sun and sand, is dependent on its tourism enterprises to promote local resources and sustain tourism businesses. As a result, understanding the exact factors that account for local entrepreneurs’ support and/or non-support for tourism is important, failing which it might be difficult to develop tourism in a sustainable and socially compatible manner. At present, there is a dearth of research in the field of tourism entrepreneurship in Mauritius whereas this sector continues to be an important pillar of the local tourism industry. To address this knowledge gap, the present study analyses local entrepreneurs’ support for tourism development in a specific region of Mauritius. Methodologically, the study takes place using the mixed mode. The quantitative part of the study related to the administration of questionnaires and these were followed by the development of a hypotheses meant to be tested in a logistic regression model. The qualitative data was derived from semi-structured interviews conducted with formal and informal tourism entrepreneurs. The findings culminate into a Logit Model which statistically explains the factors that account for entrepreneurs’ supportiveness towards tourism. The uniqueness of this study lies in the fact that it is the first to propose a Logit Model on local entrepreneurs’ support for tourism development. Findings derived from the study generate important information on factors motivating entrepreneurs to support tourism and are helpful to tourism planners and promoters as well as policy makers. The study winds up with some discussions and proposes avenues for future research.

The phenomenon of tourism phobia and the problems of tourist coexistence are the subject matter, by means of a comparative analysis between the cities of Amsterdam, Barcelona and Berlin. The main objective of the study is to explain the tourism phobia phenomenon with the purpose of knowing the common characteristics that cause the appearance of problems of tourist coexistence. In order to be able to study this phenomenon, a statistical data search and informative articles analysis have been executed to point out the common characteristics and the problems of the tourist activity in this three cities. At the same time, interviews to personalities of the sector have been carried out, and include professionals from the public administration, associations, teachers and members of the private sector. This research has led us to consider that tourism phobia, etymologically speaking, gets away of the most common thoughts and opinions. All three cities present several problems of coexistence between tourists and residents which appear from the overcrowding of public spaces and as a result of a bad planning of the territory, causing discomfort among citizens. These problems have been understood as the hate to tourism by some industry players and the media.

Service marketing has evolved from focussing on products to services to experiences. Enterprises are nowadays competing for and looking for competitive advantages in experiences rather than customer satisfaction. Even though customer experience management is nothing new, it is a field that has evolved strongly in the last years. Especially in tourism destinations, various local tourism providers struggle with providing high service quality throughout the whole customer journey.  Customer experience management has thus become an interesting approach also in tourism research. This paper applies customer experience research by using an innovative research method. Mobile ethnography as a qualitative method transfers the classic ethnographic approach by using mobile devices. Thus, the customer becomes a researcher himself and has the possibility to self-structure his or her data. Especially for tourism destinations, this method allows to “follow” the guest throughout the geographical space that he or she uses and collects data in real-time and in-situ. It therefore overcomes many of the disadvantages of both classic survey studies and ethnography. However briefing of participants and incentivising them turned out to be the main challenges in two projects carried out in the Austrian province of Upper Austria.

The sustainable development of the tourist activity is linked to the level of satisfaction of the resident. The opinion and attitudes of the same ones in reference to the tourist activity allow the development of successful tourist planning policies. The municipalities of Canet d'En Berenguer, Cullera and Oliva suffer from summer overcrowding. In the study carried out, the presence of a sun and beach tourism based on urban development could be observed, which gave way to the search for the local level of satisfaction by means of population surveys. It was perceived that the tourist activity is accepted favorably, however it is also noticed that the sensation of overcrowding is present and generating anthropic pressure in the territory, stereotyping the landscape and altering the character of the destination. It is concluded that the local population is beginning to be annoyed by the overcrowding. To this, the administrations offer complementary services and products, without understanding that the problem lies in the typology of urban use implemented as a form of tourist activity and not as a complement to economic, social and environmental development.

The paper estart from the fact that commercial establishments with a luxury commercial offer, affordable luxury and "mass market" are established in the main commercial streets of European tourist cities. Likewise, the concept "Prime High Streets” are defined and justified as those streets with the highest rental prices for commercial premises in the city and for having maximum tourist demand and pedestrian traffic. In the case of Barcelona, the streets that meet the above criteria are Passeig de Gràcia and Av. Portal de l'Àngel.In addition, the research shows that the rental prices of commercial premises impact on the profit and loss account of commercial establishments through the effort rate and impact on the profitability of commercial premises investors in the main shopping streetsFor the first time in the scientific literature, the impact of the commercial real estate market is analysed in the articulation of the commercial offer of the prime high streets of the main European tourist cities, causing a sectoral, business and property concentration. The analysis focuses on the city of Barcelona.

Urban tourist destinations’ increasing popularity has been a catalyst for discussion about the tourist activity geographical circumscription. In this context, Big Data and more specifically location-based social networks (LBSN), appear as a valuable source of information to approach tourist and residents spatial interactions from a renewed perspective. This paper focuses on approaching similarities and differences between tourists and residents’ geographical and functional use of urban economic units. A user classificatory algorithm has been developed and applied on YELP’s Dataset for that purpose. A residents and tourists integration ratio has then been calculated and applied by types of businesses categories and their associated spatial distribution of the of 11 metropolitan areas provided in the sample: Champaign (Illinois, US), Charlotte (North Carolina, US), Cleveland (Ohio, US), Edinburgh (Scotland, UK), Las Vegas (Nevada, US), Madison (Wisconsin, US), Montreal (Quebec, CA), Pittsburgh (Pennsylvania, US), Phoenix (Arizona, US), Stuttgart (DE) and Toronto (Ontario, CA). Business category results show strong similarities in tourists and residents functional coincidence in the use of urban spaces and leisure offer, while there is a clear geographical concentration of activity for both user types in all analysed case studies.

This paper investigates the role of sustainable development in city tourism attractiveness. A tripartite theoretical model of tourism attractiveness was tested to verify the relevance of the economic, environmental, social and cultural aspects of urban sustainable development. The comparative analysis of Québec City and Bordeaux was based on visitors’ perceptions established through a questionnaire survey conducted with 499 tourists in summer 2014. This analysis produced three main findings. First, four levels of city tourism attractiveness were revealed (context, belt, complementary attractions and nucleus) and variables related to the urban living environment stood out in importance. Second, visitors recognized four sustainable development dimensions, and proved most sensitive to cultural aspects, followed by environmental concerns. Third, the correlations between tourism attractiveness and sustainable development were stronger within the broader spheres of attractiveness. The study reveals that sustainability notions are most strongly internalized by tourists when tangibly reflected in the public space. By offering visitors new perspectives on urban living, sustainable development brings smart solutions to perpetuate the urban tourism industry while improving quality of life for residents.

This article presents a web quality evaluation model designed to assess the overall quality of a tourism website. The main objective of this article is to demonstrate that the quality of a tourism website can not be evaluated using only an analysis system focused on the technical aspects of a website, a method that is generally used by both the industry and the academy. Taking into account the official website of the city of Barcelona, this research shows that to evaluate the quality of a website it is essential to use two different analyzes. The first should focus on the strategic aspects of the website and the second should focus on the technical aspects. To validate this hypothesis, two analysis systems have been used. The SAST system, focused on technical aspects, and the WSCM system, focused on strategic aspects. The results obtained after the implementation of both systems show that its coordinated use provides a complete and accurate evaluation of a website. In addition, this study verifies the hypothesis that the use of a single system in the evaluation of a website could result in a biased and inaccurate conclusion of the analysis.

In the analyzes carried out in the plenary session of the National Accreditation Board (JAN) on the processes of external evaluation of the Institutions of Higher Education (HEI) in Cuba, a group of difficulties was identified that recommended the incorporation of a member of the same as an observer of these. From the analysis of the reports presented by each evaluator and the analyzes in the plenary session of the JAN, this work was proposed to systematize the experiences reached from the year 2016 to date and to propose a procedure that guides the work of future observers. The practice demonstrated the utility of the observer in terms of ensuring compliance with the regulations and procedures established by all the evaluators, while also leaving important recommendations for future processes
