Resumen
El objetivo de esta investigación fue evaluar el efecto del enriquecimiento en cookies con aceite tarwi (X1) y semillas de chía (X2) en sus características tecnológicas y sensoriales, para lo cual se usó un planeamiento experimental de optimización de procesos por superficie de respuesta mediante un diseño central composicional rotacional (DCCR) 22 dando un total de 11 tratamientos, siendo los niveles de X1 (4; 6; 9; 12; 14 %) y X2 (2; 3; 6; 9; 10 %) y un control (F0) elaborado con harina de trigo sin ninguna sustitución en la formulación. Las características tecnológicas evaluadas fueron: composición ácido grasos (GC), textura instrumental y color (método CIELab). Los resultados muestran que X1 mejora el color y dureza, mientras ácido graso Omega 6, ácido graso Omega 3 y fracturabilidad tuvieron influencia significativa por ambos factores (X1, X2). Para la evaluación sensorial se aplicó un test con escala hedónica a 20 panelistas semientrenados, únicamente se evaluó sabor. Las cookies con mayor X1 presentaron mayor puntuación. La formulación óptima dentro de los rangos estudiados fue F3 (12% X1 y 3% X2) (7,72 % de ácido graso omega 3; 37,54% de ácido graso omega 6; y aceptabilidad de 6,58 en una escala de 7 puntos).

Resumen
El objetivo de este estudio fue optimizar el rendimiento de polisacáridos y proteína, viscosidad de gel y propiedades texturales del mucílago de Linum usitatissimum utilizando un diseño secuencial. Los factores de estudio fueron el método de extracción (sin agitación, con agitación magnética y con ultrasonido), la temperatura (40, 55, 70 °C), tiempo de extracción (1, 2 y 3 h), pH (5,5, 7,0 y 8,5) y relación semilla:agua (1:10, 1:20 y 1:30 g/L). En la primera etapa, se utilizó un diseño de screening que permitió determinar que la temperatura (°C) y tiempo (h) de extracción fueron los factores que tienen efecto significativo sobre el proceso. Se evidenció que el método de extracción no tiene efecto significativo sobre el rendimiento y porcentaje de proteínas. En la segunda etapa, utilizando un diseño completo, se logró determinar que las condiciones óptimas de extracción del mucílago fueron: 85 a 90 °C; 4,5 a 5,0 h; pH 7,0 y relación semilla:agua de 1:20, éstas condiciones optimizan el rendimiento (9,73%), el porcentaje de proteínas (12,5%) y proporcionan un gel con una viscosidad de 1110,90 mPa.s y 159,97 g de firmeza, 568,48 g.s de consistencia, 29,52 g de cohesividad e 14,48 g.s de índice de viscosidad.

Resumen
Identifying the ideal product is the most important step in new product development and improvement of existing ones. The aim of this study was to identify the ideal smoked bacon using PrefMFA and PrefMap considering three different sensory spaces obtained via descriptive analysis (DA), projective mapping (PM) and CATA questions. Six smoked bacons were characterized by ten trained assessors using DA, and by two consumers panel using PM (n=93) and CATA questions (n=100). Also, one hundred consumers indicated their overall liking using a nine-point hedonic scale. The results showed that both techniques identified an ideal product. However, the sensory method has a greater effect than the multivariate procedure to obtain the sensory spaces prior to the preference mapping. Subsequent studies with other food matrices are still necessary in order to generalize our results.

Resumen
In recent years, it has been developed various techniques based on the applicationof tracers and radiation sources to solve problems operating facilities oil refining andgas.In this case, a series of determinations are reported with a series of experiencesradiotracers a fractionation plant natural gas liquid in Peru, for leaks / passes thatcould exist in three reboilers different processing units.The tracer technique for online detection was used, by using two radiotracerdepending on the phase to be investigated: oleic acid labeled with Iodine 131 asa radiotracer for the hydrocarbon phase and an aqueous solution of iodine 131 forthe aqueous phase, when necessary. A data acquisition system, a portable PC, anddetectors in proper positions were used. Recording values were synchronized as wellas ambient background, prior to each injection of radiotracer. Radiation counts wererecorded at intervals of 1 second, depending on each case.Six determinations were conducted by six injection of radiotracer incorporated,either in tubes or shell, as applicable.We achieved detection limits leakage of 0.1 %, of one stream to another.

The main objective is to transmit HD content enhanced with high image quality throughstreaming video.In recent years the technological advance, in what refers to the transmission of highresolution video with high resolution, is booming but showing a low quality of video ina series of frames per second using more bandwidth and at the same time less often.Thismeans greater loss of information per data sent, and giving priority to moving objects and3D images but forgetting the quality and fidelity of it. This need motivated me to developthis research to find an equitable and progressive solution to the low quality of video, butbased on the analysis of the standards that gave rise to the compression. As this study ledme to contribute or modify the mathematical algorithms within the compression standardsalready known as: MPEG-1, MPEG-2, MPEG-4, H.264 and H.265, with an exhaustive researchusing graphs, diagrams and schemes that justify the results obtained, as well as performancesimulations through the use of scientific computer software.

Resumen
Ancient architectural monuments stand witness to the needs of its builders and its eras.The study of these buildings brings us closer to understanding the priorities of their cultural values and their technical and artistic achievements, which are valuable andstill relevant in modern architecture. Inter and multidisciplinary research work carriedout during these years has enriched the methodology for archaeoarchitecturalstudy, thanks to each researcher’s particular focus. In this contribution I describe mymethodology proposal for the study of Archaeoarchitecture and its contributions,conceived as an architectural specialisation, related to the record, study anddissemination of the cultural values of archaeological buildings. I discuss newmeasuring data collection and analysis instruments, that allow for more accurate, fastand efficient studies of design patterns, geographical and astronomical alignmentsin extensive monumental complexes.

Resumen
A sample of 610 university students (265 men and 345 women, between 17 and 29years old) residing in Metropolitan Lima answered a survey about the importanceof the importance of Russia and China for Peru, its status as political and militarypowers in currently and in 2050, as well as their preference for Chinese and Russianproducts. The assessment of China’s importance to Peru was much greater than thatof Russia. Regarding preferences, 56.77% of respondents would be inclined to carryout postgraduate studies in Russia versus 43.22% in China; 54.82% also consideredthat Russia was more important than China in the profession studied; and 55.41%granted more value to a PhD in a Russian university than to one obtained in China(44.59%). Drugs (65.84%), automobiles (63.76%) and Russian toys (54.73%) weremore preferred than Chinese, but, on the contrary, TVs (61.61%), laptops (54.35%) andrefrigerators (52.30%) Chinese obtained higher percentages of preference.

Resumen
The article seeks to recognize the problems surrounding former gang members, frominterviews and life stories collected between 2013 and 2015. It delves into the speeches,motivations and more intimate experiences of young people, perceiving in family breakdown,rituals of collective effervescence, territorial defense and mutual inter group stigmatization asmain variables that allow us to understand the initiation and deterioration of gang violence.Finally, it is proposed as elements that keep members of the gang, first the possibility of seeingthemselves from a viewpoint of a generalized other more consensual, and secondly assimilatethe danger spreads about them that could end their lives or stigmatize perennially.
