Resumen
The objective of this research is to analyze the concept of sustainable gastronomy and identify sustainable gastronomy strategies and the benefits obtained from its application in restaurants and gastronomic events in tourist destinations in the international context.
Methodologically, an exhaustive review of the existing literature in secondary sources (books, academic journals, web pages) was carried out to obtain the most relevant information. This is presented in six areas: characterization of sustainable gastronomy, stakeholders in gastronomy, sustainable gastronomic businesses, events in gastronomy, public policies and, finally, strategies for the generation of sustainable gastronomy. It concludes with the features that define it, the actors that are involved in it and the destinations that stand out at the international level. In the case of European countries (Italy, United Kingdom, Spain) the bases of sustainability in gastronomy are revealed. However, in Latin America (Peru, Chile, Mexico) they try to incorporate sustainability aspects into the growing development of gastronomy. While in European countries quality standards and guidelines associated with sustainable gastronomy stand out, in Latin America regulations are largely absent. In the case of Mexico, the Gastronomy Promotion Policy was recently established (2015), being the basis for the development of gastronomy with strategic points aimed at the sustainability of the sector.

Resumen
In the Yucatan peninsula, Mexico, the community of Holbox is currently considered one of the largest and fastest-growing sites in the world for tourism related to the whale shark Rhincodon typus. The present study aimed to determine the recreational value of “swim with whale shark” tourism in Holbox. Accordingly, 176 and 111 national and international tourists were interviewed, and their socioeconomic profile was determined and their level of satisfaction with their recreational experience. We use the dichotomous choice contingent valuation method, and an average willingness to pay (WTP) of US $ 120 for conservation activities was obtained. As a result, a net annual benefit from whale shark tourism of US $ 8.8 million was obtained. The study results show the high economic potential of tourism associated with this species in the Mexican Caribbean and the urgent need to strengthen the policies for granting licenses and entrance fees to protected natural areas.

Resumen
Achieving socio-cultural sustainability in a community requires, among other issues, the preservation of its cultural heritage, which guarantees that social values and identities endure for the benefit of present and future generations. Ecuador, under the Good Living paradigm, has stated in its National Constitution “the right to build and maintain cultural identity and to access and disseminate the expressions of peoples”. Based on these premises, the aim of this paper is to evaluate the management capacity of the Salango Community Touristic Center, province of Manabí. The management capacity is defined as the skills that the community possesses to preserve the archaeological site in all its integrity. A qualitative-quantitative methodology is used, which includes criteria and indicators for evaluating this capacity. The methodology is based on three axes of analysis: 1) capacity for economic sustainability, 2) transmission of knowledge and 3) ability to sustain activities. To a greater or lesser extent, these axes manifest problems that affect the sustainability of the site and therefore the Good Living of the community. However, the participation of national scientists and institutions working jointly with the local people should be pointed out as a positive aspect. The evaluation of management capacity through specific indicators is considered to be a useful starting point to reverse critical situations and ensure the safeguarding of cultural heritage.

Resumen
The objective of this work is to recognize the lacustrine gastronomic heritage present in the Lago de Texcoco territory, placing special emphasis on dishes made with axolotl. Despite the deterioration of their environment, people still preserve and value these dishes for their nutritional and therapeutic role. Through life stories, observation and tours, the knowledge and practices related to obtaining and using these resources were collected. The gastronomic products of the lacustrine lifestyle are identified and presented, paying special attention to the recipes with axolotl. The axolotl tamale (tamal de ajolote) stands out as an identity food, anchored to the territory, and the various therapeutic uses of the axolotl, supported by its well-known capacity for survival and regeneration. Thus, all these foods are recognized as delicacies and a legacy of generations that helps to preserve and safeguard gastronomic heritage, traditional knowledge, and identity and belonging.

Resumen
The article presents an analysis of the relationship between organizational culture and firm performance in the context of the restaurant industry in the city of Culiacán, Sinaloa, Mexico. From multiple regression analysis, the connection between the variables was identified. For the evaluation of the organizational culture, a questionnaire was used based on the Scale of Diagnosis of Organizational Culture and for performance, a subjective evaluation of the results of the companies. The main findings show that the organizational culture exerts a partial influence on firm performance. The dimensions of teamwork, the creation of change, and the customer focus presented a positive and significant relationship with overall firm performance, while the standards dimension presented a significant and negative effect. In conclusion, it can be noted that teamwork, creation of change, and customer focus are factors that positively promote firm performance, and the establishment of standards and sanctions causes the opposite effect. A solid work team, with the capacity to adapt to changes, can favor the permanence of companies in this industry.

Resumen
This document presents the results of a study whose purpose was to identify the structure of explicit knowledge operated in Travel Agencies to determine its correspondence with the Internal Marketing Orientation Model developed by Gounaris. The research design was non-experimental, explanatory, applied to subjects with the status of Owner, Director, Administrator, Manager, Sub-Manager of 29 Travel Agencies, located in the City of Tijuana, B.C., Mex. The results explain that the structure of Explicit Knowledge operated by Travel Agencies considers the dimensions of (A) Generation of internal information, (B) Communication of internal information and (C) Response of internal information of the Gounaris Model, which are consistent with information-based decisions, business philosophy and human capital management. The study concludes that a permanent monitoring of its Explicit Knowledge processes such as procedures, standards and regulations of the organizational micro environment, in addition to the rights and obligations of the Companies and Human Capital, could guarantee a healthy internal marketing.

Social repercussions of the design and management of the city-brand in the promotion of MICE tourism

Resumen
Meeting tourism has promoted competition between cities, where the transformation of places into brands is relevant for tourism development. The city brand is a strategy that stimulates a positive image supported by attributes of the place and culture, with positive consequences for social development. The objective of this work is to analyze the factors –human, market and attraction– that are linked to the design and management of a city-brand in a Mexican city. For such purposes, a quantitative and descriptive approach was followed, applying a questionnaire to a sample of 50 inhabitants representing establishments linked to the tourism industry. The results highlight a greater interference from authorities and the business sector, distancing citizens; It also alludes to the existence of an improvement in the infrastructure and the private sector, factors that allow us to visualize advances that are limited to particular interests, far from social needs. The discussion focuses on the need for an agreement between leaders and society to plan the city that is desired, as well as a diligent strategic direction. The relevance of a leading figure that assumes said managerial responsibility is concluded, built from the common and social interest, whose brand management could fall to the OCV, working together with the government, private initiative and society towards the same objective, and also the relevance of integrating the natural attractions that are close to the city. These intentions can help the city boost its brand equity and better compete in the meetings industry.

Resumen
The aim of the research is to analyze the experience of the millennial generation tourist tijuanense in the use of technologies during the planning and stay on tourist destinations visited. Methodology, based on 95% confidence and 5% admitted error, a questionnaire was applied to 385 individuals of millennial population residing in the city of Tijuana, Baja California, Mexico, who made at least five trips outside the State of Baja California in 2019. A descriptive analysis of data was carried out, multiple linear regression was applied to identify the relationship that the use of technological services and Internet apps used during the trip has with the experience obtained by this segment of the population, thus factor analysis was used to obtain the key technological factors that benefit the millennial tourist experience. Results, regarding the technological services that they use most frequently during their visit to the destination, is the geolocation that optimizes the travel times in the places of interest. Likewise, they share their experiences and make recommendations through Facebook, WhatsApp, Instagram and Google. A positive mean correlation was obtained between the variables analyzed: frequency of use of technological services and use of apps with the experience of travel in millennials, in addition to this, the technological elements that benefit the experience of these tourists is the availability of ICT in the destination and obtaining information on places of interest, through digital tourist guides. It is concluded, the use of technological services and apps, turn out to be key components in the positive experience of millennials tourists in the destinations they visit.

Resumen
This paper characterizes the economic development of the rural community of Bahía de los Angeles, Mexico, through the estimation of the Social Accounting Matrix, using direct information, under the hypothesis that tourism constitutes the engine of its economic development based on the utilization and attractiveness of its natural resources, while fishing and other sectors are marginal. Results contradict this hypothesis, suggesting that fishing, even with imposition of environmental controls, together with trade and services, explain better its dynamics, and tourism plays a marginal role. However, it is concluded that the development of this community requires a mixed public policy approach that integrates endogenous and exogenous factors wherein geographical characteristics, natural assets and biodiversity should be valued as a competitive advantage, and both fishing and tourism should play a preponderant role for the future development of this place. Some elements of public policy are proposed in the paper.

Resumen
This research focuses on identifying which practices are implemented by hotels in the city of Culiacán, Sinaloa, to contribute to sustainable development and at the same time to measure their impact on maximizing their tangible resources. For this, a quantitative study approach was applied and the survey questionnaire based on the Likert scale was used as the information gathering technique. The research was exploratory, non-experimental and correlational, the study population was 21 hotels with more than 10 direct employees. The findings found show that of the 26 practices evaluated, 13 impact on the maximization of their resources, being those that group the economic dimension those that generate the greatest economic benefit. The aforementioned allowed the design of a simple linear regression statistical model useful for forecasting the profitability of lodging establishments through their sustainable practices.
