The objective of this work is to analyze the processes of location of poverty strips that take place in Bacalar, Quintana Roo. First, a conceptual approach to the poverty strips is proposed and the implications of tourism in the growth and economic development of a region are theoretically discussed. To commit the objective, a two-phase cabinet methodology was proposed, first the poverty indicators and poverty maps that the National Council for the Evaluation of Social Development Policy (CONEVAL) generated with a level of disaggregation at the Area level were reviewed. Basic Geostatistics (AGEB). With these data, buffers were created in ArcMap to measure the degree of influence that the Bacalar Lagoon has regarding tourist activity and socioeconomic spatial segregation. This made it possible to delimit the poverty strips that were identified in Bacalar, with Laguna itself, Avenida 9 and the Federal Highway being the limits and areas of influence of the poverty strips. It is concluded that in the case of Bacalar tourism has brought with it undoubted elements to speak of economic growth, however, the identified inequality, as well as the poverty strips, allow us to question whether tourism activity has really generated development in Bacalar.

Guadalupe Valley is the most characteristic region of Baja California in terms of wine production, for this reason, sustainability is considered a way to allow both the permanence of companies, as an added value, for the consumers. In this work, a measurement of sustainability was carried out with respect to the economic, social, environmental and organizational variables to measure the current state of the wine companies in the region, this through the application of a survey to winemakers and managers of companies, finding that most of the organizations are at a medium and high level according to our own scale. In addition, it was sought to relate the levels of sustainability with the annual production volume through the Spearman correlation, finding an association level of 0.443, so it is considered that the relationship between both variables is weak.

This paper examines the territorial dimension of tourism in Chiquitania, an isolated region in east Bolivia. Being sparsely populated, lacking significant physical infrastructure and offering limited services to the local population and visitors alike, this area is far from having adequate conditions for the promotion of tourism at both national and international levels. Still, the cultural heritage in Chiquitania is singular, ascribed to the missions built at the time of the Jesuitical presence in the area, and nowadays promoted for tourism purposes. By carrying out field-work, onsite interviews, internet questionnaires and generating new cartography, this research manages to reveal the existence of seven mission towns to where a small number of tourists travel, from afar, wanting to experience the thrills of this special interest tourism in a very remote location.

Currently in Mexico the action of man has generated environmental degradation, loss and decay of natural environments with tourist potential, derived from an inadequate interrelation within society and the lack of observance from the academy through various areas of research. Therefore, it is presented how different disciplines interact through research, laboratory, studies and analysis of the geographical, hydrogeological environment, land use, environmental and social diagnosis, for the recovery of a natural environment (San Lorenzo Toxico, State of Mexico). Altered and unaltered soil samplings and permeability tests were carried out to study the adaptation of plant species taking the environmental diagnosis as a reference, in addition to evaluating tourist services surveys. It was obtained that a forest and soil recovery is necessary, with the possibility of implementing mixed recreational spaces in various areas, without altering the existing natural environment. More than one discipline intervenes in the creation of public spaces, where adequate planning, organization and administration of natural resources and environments allows the development of vulnerable societies.

Mexico needs information about supporting the narrative of the importance of tourism in the country, at subnational level. Currently there is no Tourism Gross Domestic Product (GDP) data, at state level. The general objective is to formulate a methodology that allows an approach to sizing tourism GDP at state level in Mexico. Two particular objectives are developed: 1) calculate the percentage that tourism GDP represents in the GDP of each federal entity, and 2) calculate the percentage that each state's tourism GDP represents in the national tourism GDP. A quantitative methodology has been designed with the two methods for data processing: the "top-down" method based on the national tourism GDP provided by the Tourism Satellite Account of Mexico, and the "bottom-up" method based on the regional data of Sector 72. To correctly infer the indicator, the Cluster Analysis technique was used in order to confirm the calibration weights for the sizing, deduced from the national data. Our findings suggest that Quintana Roo is the state that contributes most to its own state GDP (45.6%), and Mexico City has the highest share in the national tourism GDP (15.3%). New maps were created to illustrate the regional distribution of the monetary tourism contribution, which in general, 35% could be concentrated in states with a “sun and beach” tourist vocation. Tourism activity is developed in all states, although, if we consider the national tourist GDP (91.6 billion dollars, in 2016), half of this is concentrated in 6 states: Mexico City, the State of Mexico, Quintana Roo, Jalisco, Veracruz and Guanajuato.

Tourism sustainability in urban tourism and historic cities is a key issue in the present article. Its purpose is to understand a critical case study of (un)sustainability: The Puy du Fou theme park (PDFE) in Toledo, Spain. The case is analysed from a holistic approach (environmental, touristic and the role of stakeholders) and uses a deductive method. Project and media documentation are used; an empirical survey was conducted among residents asking for their opinion on the opening of the park. PDF generates environmental and tourism unsustainability. PDFE poses a serious environmental risk on local flora and fauna, causes pollution, and has an impact on climate change. It will increase the number of visitors by a third and will create overtourism. Nonetheless, stakeholders strongly support the project, favouring the economic outcomes to the idea of sustainability. Public institutions facilitate the project with urban planning and fiscal licences. Private stakeholders are confident about the promise of increased activity. The local community, despite some opposing minority voices, also openly supports PDFE, as shown by the survey. The findings are of interest because the opening of the theme park PDFE marks an unprecedented milestone unseen in any other historical European city, due to its dimensions and repercussions and here it is academically analysed.

The general objective was to determine the level of acceptable change in tourism activities for sustainable use within the Lagunas de Montebello National Park. (PNLM). The method was Limits of Acceptable Change (LCA) with multi-criteria analysis, key informant interviews and group workshops with local inhabitants. The results included a preference for tourism as a source of employment and local development, as well as acceptability to change in natural areas with tourist use. Public institutions will be able to design better policies and strategies linked to sustainable use.

The traditional gastronomy has taken on a greater prominence in the tourist activity, nowadays, it can be considered a tendency in which there is a manifest interest by looking for the singular, the difference, the experience, the local tones, the looking for new experiences that have placed it beyond a simple complementary service. However, a gap has also been identified in terms of a broader knowledge because even when there are very important initiatives to inventory and visualize the mexican cuisine, are not enough to cope with the vast, formidable and amazing gastronomy heritage. In this context, the objective of this article is to present an analysis and revaluation of the knowledge generated through graduation works of the Faculty of Tourism and Gastronomy of the Autonomous University of the State of Mexico, based on a desk study that involved a systematic procedure of inquiry, collection, organization, analysis and interpretation of data. The main conclusion is the need for a gastronomic compendium of the municipalities studied here, oriented to the registration of the richness of culinary knowledge of local level that can be a potential cultural attraction. Thus, the gastronomy information record can become a source of knowledge in the generation of strategies of preservation and diffusion of the culinary heritage, that could help to maximize the contribution of gastronomy tourism.
