The dehydration operation that consists in eliminating as much water as possible from the selected food in a series of controlled conditions, such as: temperature, humidity, speed and air circulation, in order to prolong the useful life of the food. In this way, the present study is a business plan, in which the commercial, technical, economic and financial viability of the production of dehydrated chili, onion, cumin and oregano was evaluated. The results of the business plan suggest the existence of a potential unsatisfied demand in the city of Estelí, the source of acquisition of raw materials closest to the location of the company is the municipality of Sébaco, located 33 km from the plant. The location of the microenterprise is in the community "Las Cameras", located 20 km from the main market, in Estelí. The total initial investment is $ 164,946.47, where 50% is the contribution of the partners and 50% of the external financing. The reasons for profitability show the percentage of return obtained in relation to net income, total assets and net sales, obtaining 60% on the return on capital, 47% on total fixed assets and 24% on the net sales. In the first year reaching good levels of profitability.

In order to identify the aspects that affect the academic performance of the university students, interviews, focus groups for students and teachers of the Agroindustrial Engineering career at the UNI North regional headquarters in 2016 and 2017 were applied. The students expressed that the academic success was related to the discipline, their study habits, the professional motivation and the support provided by their family. Teachers highlighted as important qualities that successful students have, such as: appropriate study habits, open mind, want to learn, be self-taught, be supportive, participate in extracurricular activities, be disciplined and also responsible.

In this article we present the experience of Entrepreneurial Training of the Facultyof Chemical Engineering (FIQ) 2015-2018 is presented, which had as purpose to develop skills, talents and entrepreneurial attitudes in the students, faculty and administrative staff of the faculty to contribute to its growth personal and professional. The process began in September 2015 and since then three generations have been trained, with a total of 152 participants, of which: 12 teachers, 6 administrative employees, 124 students from first to fifth year of the Chemical Engineering career and graduates of the FIQ, as well as 10 students participating in other UNI careers, stories such as industrial, mechanical, agricultural, civil and architectural engineering. Taking place in March 2018, the first Graduation of Entrepreneurs in which 32 certificates of approval of the Entrepreneurial Training course and Design of Business Plans were delivered, with the presentation of 11 completed business plans.

El conocimiento actual sobre la subsistencia durante las ocupaciones iniciales del bosque de Norpatagonia se basa, fundamentalmente, en la representación taxonómica de tres sitios (Monte Verde, Marifilo 1 y El Trébol). Sin embargo, las historias tafonómicas de los conjuntos óseos y/o las modalidades de aprovechamiento de las presas, permanecen desconocidos. Para completar este vacío de conocimiento, se presentan los resultados del estudio de los conjuntos óseos del Holoceno Temprano y Medio del sitio población Anticura. Se pudo establecer que los carnívoros fueron los principales agentes involucrados en la formación de los conjuntos, utilizando el sitio como madriguera y/o letrina. No obstante, se identificaron trazas derivadas del comportamiento humano que sugieren que, en el Holoceno Temprano, pequeños grupos de cazadores recolectores realizaron breves estadías en el sitio aprovechando, con diversos propósitos, huemules (Hippocamelus bisulcus) y zorros (Pseudalopex sp.) y, en el Holoceno Medio, también pudú (Pudu puda).

The goal of this paper is to present the outreach activities carried out in four schools of Puerta de San José (Belén, Catamarca), based on the shared experience in the field trip of the course Arqueología Americana II in 2017. These activities aim to promote the appreciation and preservation of local archaeological heritage. To that end, talks and activities were held with the students and teachers of the schools about the archaeological work in the region, and some key notions and terms were discussed. Different degrees of knowledge about archaeological heritage were identified, which we link with the emphasis given to the issue in the different schools. As a result, children and teachers associated the concepts discussed with the archaeological sites and objects of their own places. Finally, we highlight the important role of outreach activities in archaeology, along with research and teaching, for a participatory construction of the past.

This paper focuses on the analysis of the ceramic material recovered from the site of El Taco 19 (7th and 8thcenturies AD), located on the summit of the El Alto-Ancasti mountain range. Due to the information scarcityon this materiality in the study area, we proposed to carry out a first approximation to it. Three stages ofanalysis were proposed: in the first place, a macroscopic study of the types of paste was carried out, laterwe proceeded to carry out a reconstruction of the ceramic forms and, finally, a performance analysis of thevessels identified. Through this, we were able to identify variability in the ways of making the vessels, alsopartially reconstructing the shapes of several pots and interpret some of the uses for which they were made.

The Ambato Valley is located in the center-east of the province of Catamarca, within the Department that bears the same name. This valley is bounded to the west by the mountain range called Ambato-Manchao (4050 masl), while to the east the territorial limit is given by the Serra Graciana-Balcozna (1850 masl). Based on the field work carried 2013-2014, a set of structures and materials on the surface (i.e. ceramic and lithic) were observed. This new site identified as La Rinconada Arriba (LRA from now on), invites us to suggest that it is not possible to think of this agro-pastoral system as a homogenous whole, but that it is necessary to understand it with variants that can respond to various product transformations of varied social, political, environmental and/or chronological relationships.

We present the analysis of the archaeological from the R1 enclosure of the Pueblo Viejo de Potrero site, (Department Cochinoca, Province of Jujuy). The specific aim of this paper is to reconstruct, by analyzing the recovered material, the functionality of R1 during their cycle of use and abandonment, as well as to analyze on how cultural formation processes affected the distribution of such materials in the archaeological context. Several lines of research were followed for the analysis and identification of cultural formation processes, making contributions about functionality changes of the studied enclosure through its cultural biography.

It is discussed the macronutrient characterization of diets consumed by diverse hunter-gatherer groupsfrom southern Patagonia during the Late Holocene. Stable isotope analyses on human bones from BeagleChannel, combined with Bayesian mixing models, detect a high protein intake, more than what health agenciesrecommend. In the second case it is performed stable isotopes analyses and chemical characterization ofadhered and absorbed organic residues to ceramic containers from the central-west of Santa Cruz. Resultssuggest guanaco was processed and/or cooked in the ceramics used by these groups, with very low visibiltyof vegetable processing. Although some studies warn about the health risks linked to these high-proteindiets, these case studies exemplify the adaptive flexibility of human organism, to diverse foodways in theirnutritional composition.
