Objective: Propose a conceptual model for the analysis of food consumption in a context of sustainability during the COVID-19 pandemic. Methodology: A systematic bibliographic review was carried out through a search for data in Web of Science and Scopus of articles, selecting original research articles published since the beginning of the pandemic in December 2019 on the behavior of food consumption in a context of sustainability. Results: External factors were identified, such as object stimuli, including price, availability, online supply, quality, variety, recognition, social responsibility and food safety, and psychological stimulation such as perceived risk and COVID-19 event strength, which affect the internal state of the consumer, and lead to purchasing behavior as postulated by the stimulus-organism-response model. Limitations: Difficulty accessing studies published by subscription restricted the analysis to open access research, and the search was limited to two databases. Conclusions: Under this model, it is possible the effect of COVID-19 on the internal state of the consumer can be quantified and how this causes the consumption of sustainable food can be analyzed. Consumers choose to buy sustainable products for their health, social and environmental values and for the enjoyment experience involved in their consumption, which are affected by object and psychological stimuli.

Objective: Contribute to the discussion of the peasant question in the 21st century. It considers peasant identities as a factor of change and continuity that explain their permanence in the hostile scenarios of modernisation. Methodology: The empirical support is provided by the voices of peasants from Palenque, Chiapas, Mexico and the Department of Cauca, Colombia, collected through participatory research during 2019 and 2020. Results: Those reveal a range of identities that include both imposed and self-affirmed identities, which allow us to understand that the relationship with the land is not limited to its use, but also questions of well-being, freedom, security and care; that peasant work, although it includes a multiplicity of nonagricultural activities, does not lose this character. Limitations: The age and gender specificities of the peasants with whom the dialogue took place were not analysed, as the participants were mostly male adults. Conclusions: Peasant identities are a reflection of the hegemonic power within which subaltern groups operate; but they also express a sense of being a peasant, created in their historical development and that refers to a collective way of life based on the family and the land, which is why the permanent struggle with the corporate food regime keeps the peasant in constant tension.

Objective: Analyze the conception, implementation and results of a social innovation initiative generated and promoted by a cooperative chinampera Xochimilco, in collaboration with the Instituto Politécnico Nacional; whose purpose is to promote chinampera culture and environmental awareness in preschool children from suburban areas in Mexico City. Methodology: A qualitative case study was carried out based on a methodological triangulation with document analysis, participant observation and field diary. Results: The work manages to show, in an empirical way, the process of gestating and implementing a social innovation initiative at the local level, through collaboration between different actors such as the community and the academy. Limitations: The main study limitation is the number of children participating in the project, although the effectiveness of a social innovation initiative does not depend on the number of participants but on the positive impact it can achieve, it is pertinent to replicate this project with more children from Mexico City for a wider scope. Conclusions: It is concluded that this work gives rise to a future agenda of linkage where such initiatives continue to be promoted, through other projects involving educational institutions in collaboration with the community.

Objective: Contribute to the search for elements that help consolidate sustainable food systems. Methodology: A systematic review based on metasynthesis was carried out; seven databases were searched, obtaining 237 results, of which 133 scientific articles were selected due to inclusion and exclusion criteria. Results: It was found that 9 articles address this problem by maintaining industrialized food systems, but making technical (technological) improvements or making production and supply chains more efficient. While 4 articles address it from the reduction in the distances that food travels, but focused on rural production; 5 investigations from the local; 3 from the peri-urban and 1 in the regional. The largest number of investigations (73) suggest a food system based on a type of urban production; not to mention that there are systems that can be considered hybrid (16). In addition to using some kind of link between different elements. Limitations: The systematic review is limited to the material contained in the selected databases and on the date established for the search. Conclusions: It is concluded that the characteristics of sustainable food systems vary depending on the context of the cities, which does not prevent learning between similar experiences.

Objective: We assess the impact of 2016 Hurricane Earl on consumption and prices, two main variables to understand effects for economics. Methodology: In order to test how public policy soften economic impacts, we conduct a natural experiment and analyze data by using a difference-in-differencesapproach. Results: We learn that economic impacts, produced by Earl, is not properly softened, by public intervention. Households indeed decrease consumption to compensate income shocks after disasters. We found evidence of prices decreasing after disasters. Limitations: Because we started field research 6 days after the hurricane exposure, it is probably that we did not capture whole short-term effects; additionally, we do not know anything about medium-term effects, suggesting the need of return to the field research after some months. Conclusions: A reduction in prices followed by a reduction in consumption suggests short-term welfare losses, which could not be compensated by the million-dollar intervention of public policy.

Objective: Analyses the production and marketing system of gastronomic products from the milpa to identify the economic, social, and cultural implications. Methodology: Applied a series of interviews with consumers and producers to identify the economic, social, and cultural implications generated from the production, marketing, and consumption of milpa's products. Results: There is an evident self-valorisation by producers and consumers; however, the non-existence of a link between both actors and the commercialization process allows the valuation of the gastronomic products of the milpa's are identified. Together with other urban, social, and environmental problems, the prevalence of milpas in the region would be affected in the medium term. Limitations: The results of a study focused on the Toluca Valley cannot be generalized. Conclusions: Emphasis is placed on a possible valorisation of these products through their incorporation into current contexts and needs.

Objective: The links between agro-ecology and the processes of land and territory defense was analyzed based on the experience of organized indigenous women in Chiapas. Methodology: A feminist methodology was implemented based on community workshops, interviews, and visits to home gardens by 27 women, using a feminist political ecology and communitarian feminism approach. Results: It was observed that women have not improved their conditions of access to land, which is still male property. The kitchen gardens and backyards are spaces where they carry out agro-ecological practices closely linked to their traditional knowledge; but family plots or community lands are managed with a heavy use of agrochemicals. Limitations: The temporality and size of the case analyzed is very short in front the historical problem of land exclusion for women. Conclusions: Despite not generating quantitative changes, agro-ecology strengthens women individually and collectively; their agro-ecological backyards maintain knowledge and resources for peasant life and constitute a material basis for the defense of the land-territory from everyday spaces.

Objective: To describe the process of bordering during the partial closure of the border between Mexico and the United States. Methodology: The statistics of border crossings during the period of partial closure of the border in the Sonora and Arizona region are analyzed. There is a description of the political environment during this period where new migratory movements and the intensification of the diplomatic relationship between Mexico and the United States stand out, where the donation of vaccines to prevent the Coronavirus disease stands out. Results: A contrasting difference could be found between the minimal interruption of the crossing of consumer goods and people, as well as border resilience derived from the number of people who kept crossing the border despite the limitations and uncertainty generated by this contingency. Limitations: The study was conducted only with statistics from U.S. agencies, due to the lack of data from Mexican public agencies. Conclusions: The bordering concept is reinforced to establish the process of order and classification, as well as the "coexistence" of rebordering and debordering, derived from the policies of "Covid-19 fences". This is during the Pandemic, in which a clear distinction is observed between doors open to goods; limited and catalogued openness for people, based on evidence of ports of entry between the states of Sonora and Arizona.

Objective: To propose a theoretical model to measure and intertwine the human food activities that affect the loss or achievement of ecosystem balance. Methodology: A documentary review was made on the current eating pattern, its determinants, and the impact on planetary health. Results: The transformation of the eating act, determined by different social, economic, and cultural factors, has given rise to unbalanced diets with high consumption of meat, which demand environmental systems. Parallel to this, rates of chronic non-communicable diseases have been increasing, creating a negative effect on planetary health. Limitations: This study formulates a theoretical proposal that allows addressing the complexity of the diet and its effect on public and environmental welfare, serving as a guideline for applied analysis. Conclusions: The MCS provides a broad and critical vision for the analysis and intervention of socioecological difficulties such as food, providing scientific bases for health professionals, food production, decision-makers, and public policy developers.
