Resumen
The present investigation had the general objective of developing a cream-like liquor from the fruits of Syzygium cumini [L.] Skeels. For this, a hydroalcoholic extract was made from the pulp of the collected fruits and the Design Expert 11.0.1 software (Stad-Ease Inc., Minneapolis, USA) was used for the experimental design, the variables were the addition of extract (A%) and invert sugar syrup (B%). The number of combinations thrown by the program was 8 runs including 2 replicas. The extract obtained was characterized and the selected formulation was applied in two variants of traditional cocktails. The characterization of the extract obtained yielded a pH value where the anthocyanins present in it are stable, verifying the possible presence of pelargonidin, cyanidin, delphinidin, peonidin, petunidin and malvinidin. The total polyphenol content was 287 mg AGE / L of extract with an intense purple color. The validated model showed that the components in the mixture influence in a linear way, the sensory response being less as the extract increases in the formulations. The selected formulation was obtained for 24.1% extract and 60.9% invert syrup, estimating an alcoholic degree of 27.6% (v / v) and 42.6 0Brix, therefore it is classified as a liquor cream according to Cuban regulations. The formulation of cocktails evaluated demonstrated the feasibility of using liquor in traditional cocktails. A classification of “I like it a lot” was obtained for the variant made of the “Creole Daiquiri”.

Physicochemical evaluation of blackberry wine (RUBUS GLAUCUS), made in Santa Rosa de Copán, Honduras

Resumen
A study was carried out on "Physicochemical, bromatological and sensory evaluation of artisanal blackberry wine (Rubus glaucus), made in the municipality of Santa Rosa de Copán, Honduras" with the purpose of developing a scientific and technical input that will help MSMEs (Micro, Small and Medium Enterprises) in the area, determine the organoleptic and sensory characteristics of artisanal blackberry wine produced in the Western Region of Honduras, establishing what is the incidence in consumer preferences, analyzing the demographic variables of the population or sample studied, also through the laboratory analysis prepared by the FHIA "Honduran Foundation for Agricultural Research", the bromatological qualities of artisanal blackberry wine were characterized, raw material from Belén Gualcho Ocotepeque, also sensory evaluation by expert tasters and sommelier the profile of the aged finished product, finally five (5) focus groups or cupping panel was organized, made up of 7 people to determine the sensory qualities by non-experts, initially they were trained in topics on the parameters to be evaluated in order that the evaluation carried out was carried out objectively.

Resumen
In the present work, the thermal-hydraulic design of a double tube heat exchanger was accomplished to carry out the heating of acetaldehyde, by using hot water (condensate). A sensitivity study was also carried out to determine the influence of an increase in the acetaldehyde feed rate on six equipment design parameters. The designed heat exchanger will have a total heat transfer area of 3.88 m2, an overall fouled heat transfer coefficient of 613.23 W/m2.K, a total number of hairpins equal to three and a cleanliness factor of 0.80. A pumping power of 2.01 W and 5.78 W is required to impulse the acetaldehyde and water, respectively. The six parameters evaluated in the sensitivity study increase with the increment of the acetaldehyde feed mass flow rate. It is concluded that the designed double tube heat exchanger is adequate from the thermal-hydraulic point of view, since the percentage over surface calculated (25.00%) and the pressure drop of both acetaldehyde (1,158.43 Pa) and water (4,550.70 Pa) are below the maximum allowable limit established by the process.

Resumen
This work focuses on the evaluation of the performance of five tomato varieties for the transformation of sauce through the use of discarded tomatoes, the study is quantitative where a data collection of the varieties was made: Icsan (a), Nirvana (b ), Tysey (c), Butte (d) and Pony (e) all varieties were processed as sauce, constructing the description of the process used, and the material balance per variety, obtaining the following averages of sauce yield in Kg.: ( a) 1.23, (b) 1.23, (c) 0.58, (d) 1.07, (e) 1.13, which were analyzed with the completely random design that showed differences between the average weight of sauce, when applying the separation test of Duncan to varieties a, b, e, and d are similar in sauce weight yield, but significantly different from variety c, at a significance level of 0.05. The percentage amounts of juice obtained in the tomato varieties were (a) 90.5, (b) 87.6, (c) 75.2, (d) 90.5, (e) 91.4, and according to the amount of seeds and skin that the varieties in percentage based on fresh tomato weight were (a) 4.8, (b) 7.6, (c) 20, (d) 4.8, (e) 3.8.

Resumen
Currently a great number of problems have accumulated regarding the Arctic agenda in international legal, military, socio-economic, environmental, and scientific spheres. The authors of the study believe that international collaboration in the scientific and technical sphere, built upon a legal basis, is the first direction of mutually beneficial interstate collaboration in the Arctic region. The development of international scientific and technical collaboration in the field of complex Arctic study presupposes a comprehensive approach with regard to economic, legal and political aspects, and analyzing static and dynamic indicators. Thus, it is necessary to develop a legal model of collaboration. The development of the legal model of international scientific and technical collaboration in the field of complex Arctic study involves a range of actions aimed at improving the regulatory and conceptual framework, changing the system of state management of scientific and technical collaboration in the Arctic zone in order to ensure a consistent policy and eliminate existing problems.

Scientific analysis of human capital development as the factor of territory competitiveness increase

Resumen
The relevance is in a specific problem - the contradiction between a particular territory competitiveness increase (for example, the gross regional product, budget financing) and the population interest in implementing their qualitative and quantitative characteristics (human capital) on it. The article proposes the author's approach of proving the position that the specificity of human capital development can be both a constraining and an activating factor for a territory competitiveness increase. It has been determined that the influence nature (positive or negative) is set by a combination of factors that are the main elements of mutual influence mechanisms of human capital qualitative and quantitative components and the rates of socio-economic development of a territory, which characterize its level of competitiveness. The results obtained can be used by researchers who deal with the problems of human capital theory, its development, and the relationship with the territory competitiveness indicators. The study's practical significance is the possibility of its result application: by state authorities and local self-government during the development and adjustment of documents for territory development strategic planning; the scientific community during the study of human capital and the level of territory competitiveness mutual influence.

Resumen
The choice of the government and business interaction (GBI) model is often a question more political than social, or economic. However, the formation and change of the GBI model are determined by economic and social factors that have historically developed in the study area. The trends of recent years have supplemented the factor system of the GBI with two integral components: a crisis of non-economic nature (pandemic) and digitalization of all scopes of activity. The government and business interaction models are significantly differentiated in the context of different states, and Russia, due to the scale of its economy – in the context of regions. The article presents original developments of a structural and logical scheme that can be used to determine the system of factors for choosing the model of interaction between regional governments and business structures to identify the current model and the possibilities of its transformation to optimize the interaction of power structures and companies in the region in a context of crisis or transition period. The model was tested using the materials of Russian regions.

Resumen
The article is devoted to the issue of assessing the credit risk of a corporate borrower of a bank in the conditions of the coronavirus pandemic and its consequences. The situation in the banking sector in the current conditions has been outlined, the directions of the regulator for improving the banking sector within the framework of a risk-oriented approach have been presented. The necessity of modernization of methods for calculating credit risk based on the model of expected losses, taking into account the superposition of the factor of cyclical fluctuations of economic systems, has been revealed.

Resumen
When justifying the relevance of the research task of measuring the contribution of macroregions to the country's economy, which has not yet found a scientific and methodological solution, it should be emphasized that the scientific literature does not present a system of parameters for assessing the contribution of macroregions to the national economy, there are practically no comprehensive methods for analyzing the impact of the functioning of macroregional socio-economic systems on the development of the country's economy. The article is devoted to the scientific and theoretical research of methodological approaches to determining the importance of macroregional socio-economic systems. A system of indicators is proposed for assessing the role of a macroregion in the national economy, reflecting its specificity as an integration territory and characterizing the level, degree and intensity of interaction between the actors of the macroregional economic and industrial complex.

Resumen
The new reality, determined, on the one hand, by the complexity and non-linearity of socio-economic relations and, on the other hand, by the development of digitalization and the expanding possibilities of integration of various processes, requires new approaches to the study of entrepreneurial forms and associations. Network and cluster scientific methodologies were quite revolutionary at the time but remain quite productive. The authors of the article investigate the evolution of views and discuss the feasibility of applying an ecosystem approach to the study of large business structures such as "group of companies". The logic is as follows: the larger the business association, the more it is embedded in the environment, formally (legally) located behind the contour of this structure. Therewith, it is important to take into account the current trends in the development of the ecosystem approach, the specifics and structure of the group of companies. The article attempts, based on a combination of inductive and deductive methods, to determine the prospects for possible research directions of Russian groups of companies based on an ecosystem approach.
