Resumen
Se evalúa la actividad antioxidante (AA) de jugos de arándano disponibles en los supermercados de San Luis Potosí, México, antes y después de su almacenamiento a baja temperatura (4 °C) mediante los métodos ABTS•, DPPH• y FRAP. Se analizan 12 jugos comerciales al abrirlos (D1) y 24 horas después (D2). Los resultados se expresaron como capacidad antioxidante equivalente a vitamina C (VCEAC) y porcentajes de inhibición de radicales libres. La mayor AA se registró a los 60 min, aunque fue diferente en los tres métodos. La AA disminuyó significativamente en D2. Por lo tanto, se recomienda el consumo de jugo de arándano una vez abierto el envase para garantizar el consumo de los compuestos antioxidantes asociados a un efecto benéfico para la salud.

Resumen
The mechanical behavior of cement pastes was evaluated using Portland Cement Type II 30R from five brands, to identify the optimal relationship of the cements with different types of sand to make mortars. Five series of pastes and mortars were made with each brand of cement, varying the type of sand per series in the mortars. The resistance of cement pastes is different for each brand. The same brand of cement will have a different behavior depending on the sand used. Sand influences compressive strength. To improve the mechanical performance of the mortar, the component materials are analyzed. A specific mix design optimizes the mortar in construction.

Resumen
In the analysis of the demand for carcass pork in Mexico (1990-2019), a multiple linear regression model was used. The dependent variable was the demand for carcass pork and, as predetermined, the real carcass prices of pork, beef, chicken, tortilla and per capita gross domestic product. The demand for carcass pork was inelastic in relation to its determinants: the price elasticity of pork was -0.38, that of beef (0.17), chicken (0.49), tortilla (-0.43) and income was 0.11. Concluding that in the referred period, the real prices of pork, chicken and tortilla had a greater influence on demand.

Resumen
In this paper we explore how citizen science promotes epistemic improvement both in scientific institutions and in society at large. In this sense, we offer a characterization of citizen science and show how the participation of non-specialists can contribute to epistemic strengthening through plurality. Furthermore, we examine how the inclusion of members of society in scientific research can foster epistemic improvement of individuals, by promoting critical thinking. We conclude by pointing out the fact that citizen science can optimize these kinds of epistemic improvement by designing projects that, in addition to their scientific objectives, are aimed at attaining these goods.

Resumen
El objetivo de este trabajo fue analizar la factibilidad de uso de la harina de cascara de café en la producción de alimentos, mediante la determinación de sus propiedades fisicoquímicas, funcionales y de flujo. Los resultados mostraron que la harina de cascara de café es rica en fibra cruda (13.94 g/100 g s.s.), cenizas (7.86 g /100 g s.s.) y proteínas (8.3 g/100 g s.s.). La harina presentó buena capacidad de hinchamiento (9.72 g / g s.s.), y de retención de agua y aceite (2.41 g/g s.s., 1.37 g/g s.s., respectivamente) y alta solubilidad (44.7%). Por lo tanto, la harina de cascara de café podría ser usada en la elaboración de productos alimenticios como una fuente de componentes funcionales.

Resumen
We demonstrate that the commercialization of basic grains conducted by developed countries since the 1970s has weakened the traditional agriculture of historically dependent countries, and consequently the loss of their food self-sufficiency. In terms of methodology, a historical and descriptive analysis is carried out based on data from secondary sources and statistics. The results show that in neoliberalism, while the United States and China increased their world production and exports of corn and wheat, Mexico increased the import of these grains by following the non-traditional agro-export model to insert itself into the world order. Mexico has the challenge of recovering self-sufficiency, building the food sovereignty and guaranteeing the right to healthy food.

Resumen
The effect of two colorants on the reverse spherification of a cocktail model was evaluated. Spheres were obtained from solutions of sodium alginate, sodium alginate + Sunset Yellow dye and sodium alginate + Ponceau Red 4R dye, with proportions of 0.6% m/v of alginate and 1.66% w/v of calcium lactate, being able both colorants to be incorporated up to a concentration of 0.15% w/v. The alginate solutions showed Newtonian behavior with adequate viscosity and can be stored between 4 and 6 ºC for 28 days without affecting the color. The spheres were sensorially evaluated in the ‘Good’ category, and the type of dye did not significantly influence the syneresis of the spheres up to 10 min after preparation.

Resumen
We review the literature on the convergence between educational and sociocultural aspects and their relationship with the development of cognitive skills in Deaf people. We present a brief overview of the neuroanatomical layers that underlie cognitive processes and the differences between Deaf and hearing people due to sensory deprivation. Most of the research indicated that there are differences in some cognitive functions, although there is no agreement on whether this is due to factors such as sociocultural context, late language acquisition, or brain rewiring. Finally, the need for an interdisciplinary approach to the educational, social, and personal contexts in which Deaf children develop is discussed to promote optimal and integral development.

Resumen
This paper presents a general overview of the field of artificial life. Initially, we outline the fundamental theory that defines a virtual creature, we expand this with advancements present in the field, from the creatures’ morphology to their behavior. Finally, we provide a prospective analysis of their application to improve the quality of life of humans. The term “artificial intelligence” was coined back in 1956 by mathematician John McCarthy and other researchers such as Marvin Minsky. This concept defined the science and engineering of “making intelligent machines.” Its sibling term, artificial life, is equally fundamental, and relates to the organisms using this intelligence. Currently, both fields complement each other and describe a new class of artificial organisms called virtual creatures.

Resumen
The violence perpetrated by the criminal economy against migrants is evident after the increase in restrictive measures implemented by the Mexican government as a strategy to stop irregular transit. Academic texts are reviewed, as well as newspaper resources on massacres against migrants such as those that occurred in San Fernando, Tamaulipas, 2010; in Cadereyta, Nuevo León, 2012 and Camargo, Tamaulipas, 2021. Therefore, this work aims to show tolerance and political indolence in the face of the violent intervention of the criminal economy in irregular migratory transit. The conclusions point to the Mexican authorities’ lack of attention and tolerance regarding the massacres of migrants.
